  • What is natural processed coffee? It’s called natural processed because the coffee cherry itself stays intact (in its natural state!) throughout the entire process, rather than the process initiating with taking off the outer peeling of the ripened coffee cherry. By leaving the peeling, the bean absorbs the sugars which leads to a fruitier, sweeter flavor when brewed. Something that makes this process even sweeter is that it’s more environmentally-friendly than conventionally processed coffee because it doesn’t require water! 

  • Notes: Red fruits and a silky body

  • Varieties: Bourbon, Caturra, Pache, Catuai

  • Elevation: 1,500-1,900 meters

  • Atitlán Region: This coffee region is named after the crater lake surrounded by three volcanoes: Tolimán, San Pedro, and Atitlán and contains the richest soil of all the five volcanic coffee regions in Guatemala. The daily winds stirring cold lake waters have an important influence on the microclimate, along with the high humidity of around 70-80%. Harvest along the shores of Lake Atitlán, where our partner cooperative is found, typically occurs between December and March.
